Carl Shi
Head Teacher

Carl Shi is an esteemed head teacher at our college, embodying the pinnacle of culinary and hospitality excellence. With a solid academic background, including a master’s degree in international Tourism and Hospitality from The Hotel School Sydney, a master’s degree in MBA from the Southern Cross University and an Advanced Diploma in Hospitality Management, Carl’s expertise is unparalleled. His extensive qualifications are complemented by a Certificate IV in Commercial Cookery, highlighting his dual mastery of gastronomic arts and management.

Carl has over 20 years of experience working in luxury hotels and owning successful food and beverage businesses. He has worked as an executive chef and director of operations at leading hotel chains like Radisson and InterContinental Hotels across Australia, UAE and China. His exceptional cooking skills have earned him worldwide acclaim, with numerous gold medals from international culinary contests, establishing him as an exemplary figure in kitchen mastery and leadership for students. Additionally, he holds the prestigious title of honorary member of the Emirates Culinary Guild (ECG), which is part of the global network of the World Association of Chefs Societies (WACS).

Carl is pursuing his PhD at Western Sydney University. He is researching managerial attitudes and behaviours towards food waste management in small and medium enterprises (SMEs) in Sydney’s hospitality sector. His research aims to understand the key drivers influencing sustainable food waste practices and provide practical recommendations to improve efficiency and effectiveness in the hospitality industry.

Carl has demonstrated leadership skills in sustainable tourism, business strategy, culinary innovation, and talent development throughout his career. He is a qualified HACCP auditor and published author with several culinary gold medal accolades. Carl actively gives back to the industry through hospitality and culinary education and consulting for hospitality startups.

With his diverse international perspective, entrepreneurial mindset, passion for sustainability, and deep expertise across hotel and restaurant operations. Carl’s mentorship could give them unique opportunities to gain hands-on experience implementing eco-friendly culinary practices and understand the global trends and demands of culinary excellence and hospitality management.
